Celia Cruz says, “Si no sabes bailar, oye como va…” If you don’t know how to dance, watch how it’s done…  You can dance the Salsa, but you’ll get hot. How about some salsa that will make you feel real cool?

We like our tomatoes here. Salsa is something you can make in minutes and have ready in the fridge for a few days after. Coooooool Babeeee!

I didn’t know what to think of my husband’s crazy tomato selection this year – purple? Sooooo many yellow ones! And then there are the green tomatoes with red stripes, and the red tomatoes with orange stripes. Would this combination be too weird for our favorite dishes?

The yellow ones are tangy and juicy, the others are all pretty mellow and meaty. It works itself out.  I added some fresh chopped cilantro, salt and pepper, ground cumin, and a couple of tablespoons apple cider vinegar. Lemon juice is nice too.   And it’s soooo pretty.

I like to get a big bag of corn chips, just to carry the salsa to my mouth. I really don’t care what kind, whatever they got on the shelf at Safeway. But you can use this to top salads, tacos and burritos, any dish you like with tomatoes.

One day this summer I’m going to make some fresh corn tortillas, cut them up, and try baking and frying them. I’ll keep you posted on that.
